I LOVE salted pumpkin seeds! This year I roasted over 20 pie pumpkins…. I cleared out the seeds and roasted those separately. … once the pumpkin was cooked until soft, puree in a blender….. use in your favorite recipe that calls for canned puree…. fresh is sooooo much better.
I separated the puree into 3 cup portions and froze. I now have enough puree to make 45 pies or 360 muffins :)

I’m so glad I found this post! I had already decided that I would try to roast pumpkin seeds for the first time this year! We already bought some pumpkins but I’m going to wait a little while before cutting them. But I’m bookmarking this so that I will have the seed-roasting instructions!
