Peanut Butter and Banana Quesadillas

Many of the first things my girls learned to cook are things made on a flat griddle pan – from pancakes to french toast, grilled cheese to quesadillas. A little flipping practice with mom and they are set to make themselves a delicious and fun meal.

Here’s a twist on the traditional quesadilla, with the tasty pairing of two favorite foods – peanut butter and banana quesadillas. We almost always have tortillas, bananas, and peanut butter in the house, so this is an easy meal to pull together. The grilled tortilla gets nice and crispy, and the peanut butter-banana filling gets all warm and gooey. Yum!

Peanut Butter and Banana Quesadillas

Ingredients:

  • 1 tortilla
  • 2 Tablespoons natural peanut butter
  • 1/2 banana, thinly sliced
  • optional: drizzle of honey or a sprinkle of chocolate chips

Method:

Making a quesadilla is pretty simple, right? For this quesadilla, spread peanut butter all over the tortilla, then top one half with thin slices of banana. Using thin slices allows the banana to get warm and almost melty inside the tortilla. If you like, drizzle with a little honey or sprinkle a few chocolate chips on top of the banana slices.

Fold in half and cook over medium heat until golden and toasty. I like to add a little butter to my hot pan, but it’s not necessary. Cut into wedges and serve warm.

Peanut butter and banana quesadillas make a delicious breakfast, lunch, or after-school snack. Bonus: For the 10 minutes it took us to prep and cook our quesadilla, my toddler was busy slicing and eating the other half of the banana with a small butter knife. Win-win!
