Thank you for this, Jane, I didn't feel like doing the longer version. This is the exact way I make "sun dried" tomatoes every year - in the oven. The only difference is that I don't use olive oil until the end and I remove all the seeds. Then they're just left in the oven a lot longer - until all the moisture is gone and they feel kind of rubbery. Then I pack them in jars with olive oil and they keep just about forever. Another yummy way to make these (I found this out by "accident"), is to leave them in the oven even longer, until they turn crispy. Totally addicting dried tomato chips - you can't even believe how good they are! To do this you simply need to begin roasting them early in the day, or begin them late at night and leave them cooking overnight - I've done both. And I always use organic tomatoes, too! Very flavorful. Can't wait to try these... they're roasting in the oven now!

so i didn't bake them i broiled them quickly, but the end result was amazing.

i used basil, oregano, onion powder, chipotle chili power, natures seasoning, and sugar (for one half of the batch)

they were a little crisp on the outside and had zesty and smokey flavor but when you bit into it completely they were sweet and Delicious.
thanks for the idea!!! 10/10

I can't wait to try this! They look so yummy! I think mine might be headed for a pasta dish...or maybe a salad to contrast the earthy roasted flavor and the crisp fresh greens. Yum...I need to go try these.....
