Cake Mix Fruit Pizza Cookie

You’re going to love this Cake Mix Fruit Pizza! It’s one big delicious cookie, using our recipe for 3 ingredient cake mix cookies. The best part, you can decorate it for a fun theme with fruit or candy and it’s the perfect dessert for a party!

Bake Up Cake Mix Fruit Pizza

Thanks to a reader email, I received an message asking if our cake mix cookies could be turned into a pizza cookie. I didn’t know if it could, so I HAD to try it out for myself! And I’m so glad I did, it’s such a fun recipe. There’s so many fun ways to decorate this delicious dessert. You could make it with all sorts of fresh fruit, dried fruit, or even lots and lots of chocolate candy! Here’s how we made our cake mix fruit pizza…

Cake Mix Fruit Pizza Cookie

Make Cake Mix Fruit Pizza

Ingredients:

  • 1 box cake mix – preferably vanilla or yellow cake mix, but any flavor will work for a giant pizza shape.
  • 2 eggs
  • 1/2 cup canola oil
  • Frosting – your favorite frosting recipe, we used a cream cheese frosting.
  • Fruit – sliced fruit pieces: blueberries, strawberries, peaches, etc.

NOTE: This recipe makes 2 – 12 inch pizza cookies. 

Cake Mix Fruit Pizza Ingredients

Method:

1. Add your 3 main ingredients to a bowl: cake mix, oil, and eggs. Stir it up until it’s smooth, all lumps are gone.

2. Divide your dough in half and cover each half with plastic wrap and place in the refrigerator for 30-45 minutes, to help it chill. This will make it easier to form and shape into the flat circle pizza – a lot like sugar cookie dough.

3. Pre-heat your oven to 350 degrees.

4. Once dough has chilled, place 1 of your dough balls onto a flat surface to roll out. Roll your dough into a circle shape, using your hands to keep it round. Place your round flat cookie onto a baking mat or parchment paper on a baking tray. TIP: you can roll your dough into it’s shape right on the baking mat!

5. Bake your large pizza cookie in a 350 degree oven for 10-12 minutes, or until golden brown on top. Repeat for the second dough ball.

6. Add on a layer of frosting to the pizza-shaped cookie. 

7. Now it’s time to decorate! This is the fun part. Get out all the fruit toppings you want to add and make it a beautiful design.
