This chicken and broccoli stir fry is one of the easiest meals you can make and it only requires one pot! It’s a simple weeknight meal, made with simple ingredients, that you may already have them in your pantry.

This healthy stir fry recipe is one of my secrets when it comes to preparing dinner in less than 30 minutes in one pot! Quick and packed with amazing flavors, this one pot meal will become a favorite of yours too.

How to make Chicken and Broccoli Stir Fry

  • Heat 2 tablespoons of olive oil in a large skillet over medium high heat.  Add in minced garlic and cubed chicken and cook for about 3-4 minutes, until chicken is no longer pink.
  • Add in broccoli florets and cook for another minute. Pour chicken broth and soy sauce, cover and continue to cook for another 3 minutes.
  • If preferred, add in cornstarch to help thicken the sauce.

Tips for Stir Fry:

  • Use a non-stick skillet to avoid any sticking and burning.
  • You can use vegetable broth or water. instead of chicken broth, if preferred.
  • If your sauce becomes too thick, add a bit of water to thin it out.

You can serve Chicken Broccoli Stir Fry with rice, quinoa or noodles.

Ingredients:

  • 3 tablespoons soy sauce
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon sesame oil
  • 1 lb/ 500g skinless chicken breast cut into bite sized cubes
  • 1/2 cup chicken broth
  • 1 teaspoon cornstarch
  • 3 cups fresh broccoli florets
  • sesame seeds for garnish

Method:

  1. In a large skillet heat olive oil over medium high heat and add minced garlic and the chicken. Pour sesame oil over the chicken and cook for around 3-4 minutes, until the chicken is no longer pink.
  2. Add  broccoli florets to the skillet and cook for another minute. Add 1/2 cup chicken broth to the skillet with broccoli and soy sauce. Cover and cook for about 3 minutes, until broccoli is tender.
  3. Add cornstarch if you prefer a thicker sauce and continue to let simmer until the sauce has thickened. Serve with sprinkled sesame seeds.
