Preheat oven to 400F/ 200C degrees. Line a baking pan with baking paper and set aside.

In a large bowl, add apple slices, brown sugar, vanilla extract and cornstarch and toss together to coat the slices with the mixture. Set aside.

On a flat surface, spread a bit of flour and roll out the pie crust so that is about 1o inches in diameter. Add the crust to the baking pan, on top of the baking paper.

Add the apple slices mixture in the middle of the pie crust and even out into a circle leaving about 1 ½ inches of the crust exposed. Get the edge of the crust over the apples and fold so it goes all the way around the apples.

Brush the top crust with the egg wash. Bake for 30-40 minutes or until the crust is golden brown and the apples are cooked through. Allow to cool down before serving.

Serve with drizzled caramel sauce, chocolate sauce, ice cream, etc.
