This recipe makes 2 - 12 inch pizza cookies. Divide your dough in half and bake them separately.
Divide your dough in half and cover each half with plastic wrap and place in the refrigerator for 30-45 minutes, to help it chill. This will make it easier to form and shape into the flat circle pizza - a lot like sugar cookie dough.
Once dough has chilled, place 1 of your dough balls onto a flat surface to roll out. Roll your dough into a circle shape, using your hands to keep it round. Place your round flat cookie onto a baking mat or parchment paper on a baking tray. TIP: you can roll your dough into it's shape right on the baking mat!
Bake your large pizza cookie in a 350 degree oven for 10-12 minutes, or until golden brown on top. - Repeat for the second dough ball.
