Summer is here, school is out and everyone gets to really enjoy everything! So many activities, so many things to do first, there is barely any time for properly cooked meals.
I find myself during summer months choosing wraps, salads, fresh food finger bites…just easy to make recipes that can make such great picnic items. This summer is going to be no different with a small addition to our favorites – Buffalo Chicken Pinwheels. It’s so simple to whip up and the taste is so addictive!
These Buffalo Chicken Pinwheels are perfect as appetizers, light lunch or as a snack! Everyone will love them! Ready to serve in less than 30 minutes, gone in seconds! You can add just a bit of buffalo sauce and your kids will devour them.
You only need some shredded chicken meat, cream cheese, flour tortillas and of course buffalo sauce. That’s it! Before you know it, you are sitting in front of a big bowl of buffalo chicken mixture. Try not finishing it before making these adorable pinwheels. Just spread the filling into a tortilla, roll and slice!
Buffalo Chicken Pinwheels Recipe
Yield: 25-30 pinwheels
- 1 pound chicken breasts, cooked shredded
- 1 tablespoon butter
- 1/3 cup buffalo sauce
- 8 oz cream cheese
- 1 tablespoon spring onions, thinly sliced
- 6 large flour tortillas
Melt butter in a large saucepan over low heat. Add shredded chicken breasts, buffalo sauce and stir to combine. Add cream cheese too and mix to incorporate well and get a smooth, creamy mixture. Remove from heat and allow to cool down for 5 minutes.
Spread filling on flour tortillas. Sprinkle sliced spring onions and roll up tortillas tight, without adding any pressure. Repeat with remaining filling and tortillas. Add rolled wraps to a plate, cover with plastic wrap and place them in the fridge for at least 15 minutes before slicing (if you are in a hurry, place them in the freezer for 10 minute to cool them faster).
Slice the rolls, using a serrated knife and add a toothpick to each roll.
