Roasted Pear and Grape Salad

Fall is in the air and I am very excited for fall foods. Pumpkin, apples, squash, and pears are taking over my kitchen. I picked up a basket of pears at the farmers market to make this Roasted Pear and Grape Salad. It is one of my favorite fall salads.

Roasted Pear and Grape Salad

This salad is easy to make. Roasting the pears and grapes only takes about 15 minutes and it really brings out the sweetness in the fruit. Serve the roasted pears and grapes over mixed greens with pecans and crumbled blue cheese. The pecans add a nice crunch while the blue cheese adds a nice creamy, salty texture to the salad. Dress the salad with your favorite balsamic vinaigrette.

Roasted Pear and Grape Salad

Ingredients:

  • 3 firm-ripe Bartlett pears, cored and sliced
  • 1 1/2 cups red grapes
  • 1/2 tablespoon honey
  • 1 tablespoon olive oil
  • 4 cups mixed greens
  • 1/2 cup pecans
  • 1/3 cup blue cheese
  • Balsamic vinaigrette-use your favorite brand

Method:

1. Preheat oven to 400 degrees F. Combine pear slices and grapes in a medium bowl and drizzle with olive oil and honey. Gently toss until well coated. Spread fruit in a single layer on a large baking sheet. Roast pears and grapes, turning once, until tender and golden brown, about 15 minutes.

2. Place mixed greens on serving plate(s). Arrange roasted pears, grapes, pecans, and blue cheese over the greens. Drizzle salad with balsamic vinaigrette and serve immediately.
