The marshmallow bunny is so cute. I really like your meaning of Easter idea. I have a friend who hosts a traditional Jewish Passover meal to remind the family of what the food items stand for. They serve pitas and the required bitter herbs, etc. It is an interesting and educational experience. I also like to pattern an activity after a talk years ago from Conference by President Monson, and let the kids gather their own meanings of spring and Easter and Jesus. They put what they find in Easter Eggs and we let them explain what they chose to represent spring or Easter.
